2 Ingredient Tofu Scramble 💫

If you miss scrambled eggs, then this tofu scramble is for you. This recipe makes enough for 1 serving and is ready in under 15 minutes! Tofu scramble is a great option for meal prepping breakfasts. Just double (or quadruple!) the recipe and store in an airtight container in the fridge. When you're ready to eat it, scoop out a single portion and either microwave for 30 seconds or reheat in a pan. Enjoy! 🥰



INGREDIENTS:

1/2 package of firm tofu (store the leftover tofu in an airtight container and cover with fresh water!) 

1 teaspoon Trader Joe's "vegan chicken-less seasoning salt" (add more to taste)

oil or vegan butter to grease the pan

salt & pepper to taste


METHOD:

  1. Preheat a pan over medium flame and add your oil or a tablespoon of butter. 
  2. Drain your tofu, then (using your hands) crumble it into your hot pan.
  3. Add the "vegan chicken-less seasoning salt".
  4. Stir occasionally, and cook over medium flame for approximately 3-5 minutes or until tofu scramble is heated thoroughly and most of the moisture has evaporated. 
  5. Taste, then add salt & pepper to your preference. 
  6. Serve! 😊
